About me
Hola! My name is Alexis Appel and I am thrilled you’re visiting! I am a registered dietitian nutritionist, Pure Barre fitness instructor, fan of plants and shared meals, and the mother of two mischievous dachshunds. I am also a strong believer the food we eat influences how we feel (mentally and physically), how we perform and our overall health, which is why I’ve created this page.
The younger years…
My love of healthy food and curiosity in the kitchen started at a young age. Both my Ecuadorian mama and my nerdy, hippie (in denial) father have shaped my palate, the way I look at food and how I fuel my body. Growing up, food was my medicine. If I had a sore throat, I was given plenty of garlic, green juice and Jewish penicillin (aka chicken soup). Stomach ache? Ginger tea, sauerkraut and kefir. “Bad” skin day? I was told to drink hot water with plenty of lemon, eat my greens, and slather avocado on everything, including my face. If beauty starts from within, not only should you be kind, you better feed your body right.
In the middle (education & experience)…
I completed my undergraduate degree in Food and Nutrition at the University of Georgia and dietetic internship through New York University. I have also completed my CDR Certificate of Training in Adult Weight Management. Over the past decade, I have been counseling and coaching individuals with various medical and nutritional concerns, including diabetes, hypertension, digestive issues, food allergies and sensitivities, for weight loss and weight management, and to help individuals and families meal plan and health-ify their diet. I have worked with clients in the hospital, outpatient setting and in the kitchen.
Today…
I still love playing in the kitchen, health-ifying recipes, learning about different cultures through their food, and helping individuals find ways to make small, realistic and sustainable changes to eat and live a little bit healthier. My mission is to help simplify nutrition jargon to make eating and living healthier more approachable for you and your family. Why? There’s an overwhelming amount of information out there and numerous health “experts” with differing opinions (many of which are not backed by science or research?!?), which often leads to people throwing in the towel time and time again. So, I want to help you get back to the basics, so we’re less inclined to use confusion over the lates Netflix documentary or the one liner you saw on a magazine as an excuse for eating poorly or destroying our relationship with food. Optimizing how we fuel our body and the body’s of our loved ones can have a series of positive effects - mentally and physically. How? by getting down to the basics and providing you with digestible bites of nutrition knowledge, practical tips, and delicious and nutritious recipes to help you find sustainable ways to eat healthy, practice “mindful” eating, nourish your body and feel your best.
My services…
I personally believe good health starts in the kitchen, and I love sharing my passion with my clients. In addition to counseling and coaching patients, I work on recipe and menu development for restaurants, individual clients and families. While I hope there are one or two things you can take from my site to help you feel empowered to cook, eat a little healthier, or find the 10 minutes to sit down to eat with a friend, I fully believe we all have different nutritional needs and there’s no one-size-fits-all approach, which is why I also provide individual nutrition counseling and coaching.
